aging: in concrete on fine lees until February, and then continue in oak barrels until December 2020

Pinot Grigio of great impact, son of a particularly intense vinification: fermentation in cement with skins and stems for 12 days with daily punching down, aging in the same containers until February on fine lees, then racked into oak barrels where it remains for about 10 months until December of the same year, when it is bottled.

The wine maintains a nice vibrancy thanks to a really intense even volatile acidity and despite oxidative notes in evidence. Insolent wine, you either love it or hate it.
