Winemaking: spontaneous fermentation by the only indigenous yeasts. Short maceration on the skins. During fermentation Nosiola´s skins are added, in order to fix the colour thanks to the action of the tannins contained in grape seeds.

Eugenio Rosi is a great artisan winemaker . After various experiences in social Vallagarina cellars decides to start his own business , making wine the grapes of a small plot for rent . Born with the vintage of 1997 his first wine, Esegesi, a red made from Cabernet and Merlot grapes , whose very name stands as interpreter of the Vallagarina area . Among the rows of its hillside vineyards , situated between Calliano, Volano and the heights of Rovereto , it collects as late as possible the grapes of each variety. Before you press them leaves them further mature, the grapes withering on racks in ventilated structures ( the loft ) to infuse the must - and therefore the wine - grit and velvety fullness. The wine is made only of wood , large Slavonian oak barrels and a small part in cherry wood barrels .
