Alcohol: 12,5% vol
Winemaking: maceration on the skins for two days, followed by soft pressing with a very low pressure type cage hydraulic press. Fermentation took place in stainless steel deposits. There is no temperature control, fermentation takes place at room temperature in the cellar which is around 25 ° C in October.
Aging: racked in amphora where it rests for 5 months. Without added sulphites. Bottled in February.
Serving temperature: 12-14 ° C
A good percentage of the bottles are recycled and the corks are all made of natural cork from a sustainable forest cork plantation in the province of Salamanca. No petroleum-based polluting plastic caps or aluminum caps are used.

The craftsman: Fabio Bartolomei presents Italian origins and was born and raised in Glasgow, Scotland, where his family from the province of Lucca emigrated. He has been living in Spain for about 20 years and is a self-taught wine, as well as a one man band. His wines are rather personal and without added sulphites, coming from the Sierra of Gredos, an area that proves extremely vital in the last twenty years and with an artisan production of absolute level. Someone would define Fabio as a "freak", but in reality his "declassified" wines are simply alive and with a search in constant redefinition.
Terroir: characterized by the classic continental climate, the vineyards of Fabio are around the village of El Tiemblo where he has the winery in the context of the Sierra de Gredos (in the province of Avila, 50 minutes west of Madrid). The lands, on average between 650 and 800 meters above sea level, are rather poor in organic matter, steep and with granite in disarray covered with sand and clay. Generally the wines of Gredos have a good minerality thanks also to the thermal excursions that favor an intense Garnacha. Fabio has a few hectares in property, but otherwise has established relationships with old winemakers of areas for which he controls the vineyards and harvest.
Its vineyards are often left in the wild: Fabio rarely plows the land and fertilizes it because his vineyards fortunately require little attention, at most some treatment of sulfur and verdigris. For fertilization Fabio uses the dung of local farm friends.
The wines: Fabio works essentially the Garnacha (the star of the area and often sold out) and the Tempranillo for the reds, as well as some whites like the Chasselas Dorè, the Albillo Real (not to be confused with the Albillo Mayor) , the Villanueva, the Chelva, the Sauvignon Blanc, the Malvar and the Airen (these last two wines produced not in Gredos but in the southeast of Madrid where Fabio had his old cellar).
Fabio started producing wine for hobbies in 2003, he is self-taught and produces a wide range of wines with a rather limited circulation: most of them are made in "glu glu" style to enjoy life in the company of friends. He prefers steel and amphora processing and rarely Fabio uses small woods. All production is without added sulphites.
In total, Vinos Ambiz produces around 12 - 15,000 bottles a year at best. The winery is universally considered an excellent experimenter of orange wines.
