A champagne out of the box and all to be discovered. This cuvée carries out 100% of its vinification in wood with alcoholic and malolactic fermentation carried out spontaneously, without any filtration or collage

The nose is fine and elegant, with woody hints and slight notes of licorice. The mouth is lively and broad. The taste is precise, pure and naked with citrus, white flowers and fresh fruit. Long persistence and a purity that leave the mouth extremely clean. A true specimen of haute couture du Champagne.

Thomas Perseval si trova a Chamery, nella Montagne de Reims. 2,5 ha coltivati in biologico, una scelta importante maturata dall'esperienza: "Dopo la formazione enologica e un'entusiasmante stage presso un'azienda biodinamica in Borgogna nel 2003, mi sono reso conto della necessità di dare libera espressione al frutto. Più che un semplice passaggio, la scelta della viticoltura biologica corrisponde alla mia concezione dell'agricoltura e della viticoltura che verrà"
