This Extra Brut Blanc de Blancs, with a minimal dosage of just 2 g/L, is a highly cherished and sought-after Champagne.

Made from 100% Chardonnay grapes, this wine's grapes are hand-harvested at full ripeness from three distinct terroirs: La Côte des Blancs (Grauves), La Grande Vallée (Bisseuil), and the Coteaux de Sezannais. These three terroirs create a mosaic of clay-limestone soils. The wine then ages on its lees in the Avize cellars for approximately 30 months, a period that gives it great complexity and depth.

The winemaking process reflects Calsac's artisanal approach. Following a spontaneous alcoholic fermentation—20% in wood and the rest in steel—the wine undergoes malolactic fermentation. It matures for about 7 months on its fine lees without any fining or filtration. The blend is then completed with a 30% portion of reserve wine from previous vintages, a touch that adds even more richness to this exceptional Champagne.

From the Roots to the Vision: The Birth of a Vigneron

In the heart of the Côte des Blancs, in Avize, the project of Étienne Calsac was born in 2010. A young, fourth-generation winemaker, he inherited a small estate from his grandmother. Étienne's idea was to break from the classic Champagne mold and maximize the expression of the terroir. He works with 2.8 hectares of vineyards spread across six parcels; one is in the renowned Premier Cru of Bissueil in the Montagne de Reims, while the other five are in Grand Cru villages in the Côte des Blancs. The vines grow on soils that range from chalk to sand and clay, giving the wines a unique complexity and minerality that fully reflects the diversity of the land they come from. His philosophy is based on respecting nature and minimal intervention to allow the wine to express its full identity.
