Spontaneous fermentation and maceration on the skins for 4 months in steel, with aging in amphora for two months. A unique bottle in its simplicity, which may displace, may not agree with everyone, but from our point of view unquestionable. An experience to be had, pure freedom in the bottle.

Fondata nel 1975, La Bodega si trova a Quero, a pochi chilometri dalla città di Toledo , nella regione spagnola della Mancha. L'azienda è gestita da Julián Ruiz Villanueva, un romantico vigneron che, in questa regione arida e soleggiata, coltiva 34 ettari di vigneto con vitigni autoctoni come Tempranillo, Tinto Velasco e Airén, alcuni dei quali da impianti molto vecchi a piede franco anche di 140 anni di età. "Solo noi, gli artigiani, possiamo preservare il valore culturale di ogni area: le varietà autoctone, le vinificazioni tradizionali, la semplicità, la tradizione e così via"
