Martin Vajcner manages 7 ha of vineyards in the Znojmo wine region in the southeastern Czech Republic. 8 small vineyards, organically farmed.

Each vineyard area is characterized by a peculiar soil composition, different altitudes and exposures. “I strive to make wine in a way that manifests all these factors. Nature itself determines the flavor of the wines, so my goal is to minimize interference in the process. The range of colors, flavors and aromas brings endless variety and this also gives me immense joy.” 

All of Martin's passion for his terroir and the craft of winemaking is clear from these words. He produces wines that are pure, singular and profound, introducing us to a wine-growing area that has for too long remained off our radar.

The production “protocol”

Martin for the production of his wines, uses a kind of self-determined protocol. A few simple rules to restore the faithful imprint of the Znojmo terroir in the glass. Listed below are the 8 fundamental points for the production of Vajcner wines:

- The wines are made with grapes from estate vineyards in the Znojmo wine region.

- The grapes come only from certified organic vineyards.

- The grapes are harvested by hand, paying special attention to ideal varietal ripeness and acidity.

- The grapes are transported to the pressing room and then to the Hodonice winery.

- Direct pressing is carried out for white wines and carbonic maceration for red wines.

- Fermentation is strictly spontaneous.

- No filtration and/or clarification is carried out.

- No sulfites are added at any stage of processing.
