Domaine Tissot was founded in 1962 by André Tissot and Mireille his wife, we are in Montigny-les-Arsures a neighboring commune in Arbois one of the most representative towns of the Jura and qualitatively one of the best areas.
André's goal was to produce wines in the respect and enhancement of the territory with a "traditional" approach. But the real turning point came with the arrival of Stéphane Tissot, son of André and wife Bénédicte. Stéphane returning from important training experiences abroad immediately began to bring organic practices to the winery until complete conversion within a short time, this was the 1990s.
Today the Domaine has 35 ha cultivated according to the principles of biodynamic agriculture, and a production of incredible wines of territorial identity.
Jura's mosaic of terroirs
In addition to being a formidable winemaker, capable of interpreting the evolution of wines in the cellar like few, Stéphane is also a profound connoisseur of the geology of the Jura. This knowledge, combined with the experience of many vintages with his wines, has led him to the conviction that each terroir can make the wines express themselves in a unique way, and each vineyard was created for this, to enhance the parcellar differences so usual in Jura.
The result is 36 different cuvèes! Created precisely to enhance the various expressions of the vines according to terroir. "Throughout the Jurassic age, and as early as the Triassic," says Stéphane, "the region was covered by a shallow sea to which we owe the large presence of fossils of marine origin. Then the movements of the Alps and the Jura Massif and the sediments that were deposited over time led to the formation of highly stratified soils in which clay-limestone and marly clay soils come into play. Specifically Trias clays, ideal for Savagnin and Poulsard. More friable soils with the presence of caillou and a greater limestone component are preferred by pinot noir and trousseau"
