The Calabretta winery was founded in the early 1900s, and Massimiliano represents the fourth generation of producers operating on the northern slope of the volcano. 12.5 ha of mostly vineyards with vines between 700 and 900 meters above sea level. The important height combined with the presence of the volcanic soil are conditions in which phylloxera cannot survive, so that the vines can be trained on the "piede franco" system with plants without wild rootstock; in addition, the high temperature ranges help to develop the natural aromas present in the skin of the grapes and to have a slower and more constant ripening.
The expressiveness of Massimiliano's wines is also given by the choice of making both wines from the authentic Etnean tradition, such as the aged red and rosé "Pista e Mutta," and contrada wines from small parcels, to make clear the richness of micro-territories of the volcano in their typical flavors and expressions.
The result is a very deep range of wines, with which we can enjoy discovering the various souls of the Northern Etna area.
The Work in the Cellar
The cellar, inspired by the past and arranged on several levels, houses underground rooms filled with oak barrels, necessary for long maturations according to the wine's timing. As in the vineyard, the processes in the cellar are entirely natural: fermentation, precipitation and spontaneous clarification. Thanks to this care, the resulting wines awaken the sense of smell and taste, reviving scents and flavors that belong to an almost vanished memory of this sacred place. In addition to the beautiful whites Minnella and Carricante, mention should be made of Nerello Mascalese Vigne Vecchie and Piede Franco, born of Massimiliano's desire to plant new vines without American foot, in one of the very few territories that allow it.
