For four generations, the Rollin family has been cultivating vines on 8 hectares of its own land and 6 in metayage on five communes (Pernand-Vergelesses, Savigny-les-Beaune, Echevronne, Aloxe-Corton and Chorey-les-Beaune) and fourteen appellations for a production of around 60,000 bottles a year.
Today, the winery is masterfully managed by Simon and Caroline with the aim of reconciling the traditional know-how received with the modernity of today's technologies, always with respect for the grapes and the wines produced from them.
The 14 hectares of vines thus receive unique care, perfectly balancing healthy viticulture and sustainable terroir. The aim is to allow each vineyard plot to freely express its own characteristics, depending on the environmental context and the vintage. In the cellar, vinification is also carried out with low intervention and sulphur is added in minimal quantities.
The result is authentic, fragrant and gourmet wines with a great capacity for ageing.
The vineyard and the cellar
"Soils are ploughed regularly to encourage the deep rooting of plants and ensure the diversity of organic life forms. Phytosanitary interventions are reduced as much as possible and adapted to the development of the vegetation, the assessed risks and, of course, the weather conditions.
Finally, an essential ingredient is the attention paid to the manual work carried out throughout the vegetative period of the vine. They allow us to adapt the yields to each plot and, above all, to ensure good aeration between the bunches, which is essential for a healthy harvest.
In the cellar, we seek long and natural fermentations, to allow the wines time to enrich and refine in contact with their yeasts. All winemaking processes take place naturally, with only temperature regulation. Bottling is carried out without clarification or filtration, always with the aim of preserving the integrity of the wine intact."
