We arrived at Filippo Volpi aka Il Bioselvatico farm on a sunny april morning. To get to the farm you have to go through a dirt road in the middle of old vines and as we often do when visiting producer friends, we were struck by the beauty of the place: 4.2 ha of old vines divided into 3 plots, all planted with Sangiovese and surrounded by fallow land, woods, a beautiful olive grove and a small lake, useful for water supply and refreshment for the pollinating insects present in the area.
We are in the Val di Chiana, an ancient territory made up of fertile rolling hills and in this area particularly windy. The History of Bioselvatico was born in 2018 when Filippo after various experiences in the world of catering and high quality wine took over the family business immediately taking care of the production part and the vineyard.
Today the winery is completely run in organic, with the addition of some biodynamic practices.
Essential work in the field, attention to detail in the cellar
Thanks to his many experiences abroad especially in Burgundy and thanks to the friendship made of advice and continuous exchanges with Federico Staderini and Stefano Amerighi, from the beginning Filippo has very clear ideas on what to do: cultivate only one vine variety (Sangiovese), light tillage only of the sub-row and spontaneous grassing of the inter-row, green pruning to select the productive shoots and above all the choice of never pruning the top of the shoots collecting them on the upper part of the plant. This allows the plant to produce fewer leaves and fewer "sterile" sprouts (femminelle in italian language) by finding a near-perfect vegetative balance in total autonomy where it avoids diverting energy from the fruit.
Treatments are also reduced to the bone, especially after veraison where we try not to enter the field to treat anymore.
