The process begins with careful manual destemming, followed by a spontaneous fermentation in concrete vats at ambient temperatures, allowing nature to take its course without interference.
The choice of concrete is essential; it acts as a guardian of the must’s natural freshness. To reach its full potential, the wine rests and refines in these same vessels for several months before finally being bottled.
In the glass, the wine presents a very pale, almost ethereal yellow, hinting at the elegant and light aromatic profile to come. The nose is a vibrant tapestry of sensations: it dances from delicate floral notes to fresh herbaceous hints, rounding off with an intriguing finish reminiscent of dried fruit.

Loreto Aprutino, situated midway between the beaches of Pescara and the Apennine massifs, is home to the De Fermo estate—a conscious return to roots and a tribute to Abruzzo’s profound agricultural heritage. Stefano Papetti Ceroni and Eloisa De Fermo lead this historic winery with an approach fully respectful of biological cycles, prioritizing biodynamic management that fosters soil vitality and the natural balance of the vines.
The approximately seventeen hectares of vineyards, nestled between the peaks of the Gran Sasso and the breezes of the Adriatic Sea, enjoy an ideal microclimate and clay-limestone soils capable of imbuing the fruit with extraordinary complexity and character. Every agronomic choice aims to protect the landscape's biodiversity, making the estate a harmonious ecosystem where nature guides every daily action.
