"Microbio", often also referred to by the evocative name Ser Vivo Diminuto, is the winery's namesake bottling, considered a true tribute to life and the radical philosophy of Ismael Gozalo.

The grapes come entirely from a single 1.9-hectare micro-parcel called Navales, characterized by the classic soil of pure siliceous sand. This wine comes from bush-trained, ungrafted pre-phylloxera vines with an impressive average age of 180 years. These ancient plants produce very few clusters, which are rich in extraordinary complexity.

On the palate, it strikes with a sharp acidity perfectly integrated with a distinct and deep marine savoriness, recalling the ancient fossil ocean on which the vines rest. It has a slightly golden, hazy color, with citrus, balsamic, and ancient earth nuances on the nose.

Microbio

MicroBio Wines is an artisanal, family-run winery located in the small municipality of Nieva, within the province of Segovia, in the autonomous community of Castile and León.

The founder is Ismael Gozalo, who represents the fifth generation of a local family of winegrowers. He launched MicroBio Wines in 1998 as an independent, parallel project to experiment and produce wines in total freedom.

The winery operates according to the principles of organic farming and bio-synergies, minimizing intervention both in the vineyard and in the cellar. Here, production relies on indigenous yeast fermentations, with no fining or filtration, and minimal to no use of sulfites. The name itself highlights the importance of natural microbiological processes—such as fungi, bacteria, and yeasts—which give life and character to the wine.
