This is the other side of Trebbiano Toscano! Traditionally, this grape is vinified with skin maceration, yielding rich, soft wines with hints of ripe apricot and quince. In this case, Niccolò wanted to give us a completely different, and in some ways new, version of Tuscany's most widespread indigenous grape.

With very brief maceration and a process focused entirely on subtraction, slightly early harvesting, and short aging periods, this wine is unexpectedly fine and taut. It's fresh and zesty on the entry, gradually expanding to reveal an intriguing texture. It offers substance and savoriness for a precise and clean sip!
