Chromatique is a 100% Chardonnay that comes from different plots owned by the winery. So we find vines in Mesnil sur Oger, mainly at the foot of the hill with stony, poor, very calcareous soils, and plots in Oger with richer soils.
The base is 2021 with 30% vin de reserve. Fermentation is spontaneous and takes place in between wood and steel, and malolactic fermentation for this vintage has been completed.
Named after the chromatic scale of music that uses all available notes, this exciting new cuvée is open, rich and ready to drink. Fresh and mineral on the palate. Chalk and citrus notes, especially lemon, followed by richer flavors such as nutty peach and pastry notes. Great structure and a bright, lingering finish.

Le Mesnil-sur-Oger
It is for certain the best-known and most renowned Village Grand Cru of the Côte de Blancs, made famous by a number of Maisons that have vineyards here (Salon and Krug above all, with its “Clos du Mesnil”), it owes its fame, however, mainly to peculiar geological elements and favorable exposure to full EAST.
In this geographical area there was a sea, which about seventy million years ago, retreating, created in the soil chalky stratifications as high as more than two hundred meters (called craye). Following an earthquake then, about fifteen million years ago, huge strata opened up among the chalks, which mixed with soil and many other minerals.
A totally peculiar area that strongly connotes grapes and wine. The gypsum in the subsoil absorbs heat from the sun's rays during the day, slowly releases it at night, and also regulates the flow of water very well, retaining excess water and then releasing it when there is a drought.
In Mesnil-sur-Oger, a village of only 1,200 inhabitants, there are about 435 hectares under cultivation (including 432 in Chardonnay), with 75 different lieux-dits.
Stephane Regnault
Stéphane Regnault launched his first single vineyard cuvées from the terroirs of Oger and Le Mesnil in 2018. These bottles are the result of more than a decade of reflection, cellar experience and testing. In 2007, after working briefly as a sommelier in London and as an aerospace engineer in Paris, Stéphane returned to the Côte des Blancs to take over the family domaine.
Inspired and influenced by the knowledge and sharing he had with other young producers, Stéphane decided to convert the estate to organic farming with certification arriving in the 2020 vintage, but he went further by embracing the dictates of biodynamic viticulture: “All these practices help to reduce the doses of copper and sulfur, but also to increase respect for the soil and living things. An ecosystem is a whole of which the vine is a part!”
In addition to making wine, Stéphane is a passionate jazz saxophonist. The perfect producer for Rollingwine!
