Stéphane Regnault launched his first single vineyard cuvées from the terroirs of Oger and Le Mesnil in 2018. These bottles are the result of more than a decade of reflection, cellar experience and testing. In 2007, after working briefly as a sommelier in London and as an aerospace engineer in Paris, Stéphane returned to the Côte des Blancs to take over the family domaine.
Inspired and influenced by the knowledge and sharing he had with other young producers, Stéphane decided to convert the estate to organic farming with certification arriving in the 2020 vintage, but he went further by embracing the dictates of biodynamic viticulture: “All these practices help to reduce the doses of copper and sulfur, but also to increase respect for the soil and living things. An ecosystem is a whole of which the vine is a part!”
In addition to making wine, Stéphane is a passionate jazz saxophonist. The perfect producer for Rollingwine!
The wealth of perpetual wines
The domaine comprises 4 hectares of Chardonnay, divided equally between the legendary chalk terroirs of the Grand Cru villages of Oger and Le Mesnil. Most of the vines are between 40 and 60 years old. Stéphane has selected three plots for his cuvées: Chemin de Flavigny in Oger, Moulin on the border between Oger and Le Mesnil, and Hautes-Mottes in Le Mesnil.
These are Champagnes from different vintages (A.S.) but all from the same vineyard. Each parcel is fermented and vinified equally: about 60 percent in stainless steel tanks and the remaining 40 percent in used barrels. Malolactic fermentation is neither stopped nor encouraged, as Stéphane lets the wine run its course each year, tasting regularly to determine the right time to blend the barrels and tanks in one of three perpetual solera that are stored separately for each of the three cuvées.
