Producer: Jean-Yves Peron
Côtillon Des Dames 2019 Vin de France
Savoia, Albertville
A wine of extraordinary purity, Altesse and Jacquere spontaneously fermented with a stay on the skins of more than 3 weeks and maturation in neutral oak barrels for more than a year.
Tasting reveals a mineral profile, with ripe citrus, alpine herbs and pulpy tannin that create a complex and utterly intriguing wine.
Jean-Yves Peron
Born and raised in Savoy, Jean-Yves Péron studied enology in Bordeaux in the late 1990s. After school he worked for a while at Thiery Allemand in Cornas and later at Bruno Schueller in Alsace, both of whom he considers his mentors.
In 2004 he returned to Savoy and began making his own wine in the village of Chevaline on sloping shale-covered vineyards that stretch between 350 and 550 meters. In a way, working the vineyards at these altitudes in the Alps, on such steep slopes, is more like mountaineering than winemaking, but Jean-Yves believes it is absolutely worth it to work with 100-year-old vines on this magnificent terroir.
