Born and raised in Savoy, Jean-Yves Péron studied enology in Bordeaux in the late 1990s. After school he worked for a while at Thiery Allemand in Cornas and later at Bruno Schueller in Alsace, both of whom he considers his mentors.

In 2004 he returned to Savoy and began making his own wine in the village of Chevaline on sloping shale-covered vineyards that stretch between 350 and 550 meters. In a way, working the vineyards at these altitudes in the Alps, on such steep slopes, is more like mountaineering than winemaking, but Jean-Yves believes it is absolutely worth it to work with 100-year-old vines on this magnificent terroir.

Many cuvèes and a desire to experiment

Jean-Yves is a great experimenter and is convinced that each micro-parcel has its own particular expression, which is why he works with many microvinifications, for an impressive number of cuvèe despite the few hectares at his disposal.

He works organically and biodynamically but does not feel the need to communicate this on the label to avoid conditioning in tasting; he prefers the wine itself to speak to the enthusiast. The estate is divided into several micro-parts containing Mondeuse, Jacquère, Altesse and Roussanne.

The reds tend to be vinified with carbonic maceration and some of the whites see extended maceration times on skins, a practice influenced by Jean Yves' love of orange wines. The plan is to plant two more hectares of vines in the coming years with some forgotten local varieties and to increase apple cider production.
