Francis Boulard is the face of an uncompromising Champagne, a purist vigneron who tuned into the call of the land long before biodynamics became a trend. In the heart of the Massif de Saint-Thierry, Francis, alongside his daughter Delphine, tends to just over three hectares as if they were a private garden, guided by the rhythms of the moon and the breath of the limestone and sandy soils. Here, among old vines of Meunier, Chardonnay, and Pinot Noir, chemicals are strictly forbidden to make way for biodynamic preparations and a vision that places soil vitality at the very core of everything.
The result is a pinpoint-accurate farming that translates into healthy, vibrant grapes, brimming with that mineral tension that only a truly respected terroir can return.
The Elegance of the Marne Terroir
In the cellar, Boulard’s hand intervenes only to accompany what nature has already sculpted. Fermentations are strictly spontaneous with indigenous yeasts, vinification takes place mainly in wood (old oak barrels or large foudres), and the use of sulfur is kept to the bare minimum, almost non-existent. Boulard’s cuvées are sharp, powerful snapshots of the terroir: bubbles distinguished by their visceral depth, saline structure, and an energy that pulses in the glass. Whether it is the wild character of Les Murgiers or the vintage elegance of Les Rachais, every sip is a raw and honest experience—a hymn to the purity and expressive freedom of a Champagne that stands out from the crowd.
