Ton Rimbau is a unique winemaker of great vision and experience. His immense wines are the result of a very special farming system, fine-tuned after years of extensive studies and field trials.
The vineyards and winery are based in the Penedes DO in Catalonia, in the village of Vilobi, where Ton works ancient native vines mainly of the Catalan variety Xarel-lo, Macabeu and a few other grapes.
His work in the vineyard goes beyond biodynamics, whose principles he follows, embracing the permaculture method, based on caring for the land, for people, and for containing harmful populations and consumption.

Permaculture is an ancestral method of cultivation that takes advantage of the natural ecosystem and “consists of raising vines in tree form as if it were a forest, this system allows cultivation without the need to use insecticides or chemicals, as the ecosystem itself maintains a balance that allows the vines to grow healthy and hardy.”
Spiders prevent the proliferation of plant-damaging insects, spontaneous vegetation is crushed and left on the soil, where it forms a protective layer preventing UV rays from penetrating and affecting the quality of the soil, this organic layer also allows it to host a multitude of small animals and microorganisms that generate humus.
Plant decomposition due to the action of moisture and fungi also contributes to soil quality.
