Domaine de Villeneuve Specialities: Red wine

Domaine du Villeneuve with its 9 hectares of vines is located halfway between Orange and Chateauneuf-du-Pape. At the helm of the winery is Stanislas Wallut, a meticulous and visionary winemaker who gives us through his wines a vision of Chateauneuf that is different from what we are used to.

The character of Stanislas's wines is inextricably linked to the identity of the terroir with power, structure and concentration that are the true hallmarks of the appellation, but also by an unexpected finesse, agility and ease of drinking that characterise the winemaker's style.

The 3.5 hectares in appellation Chateuneuf-du-Pape are developed on two types of soil: on one side of the road that cuts across the fields there is a sandy matrix that gives finesse and lightness to the wines, on the other side we find red and yellow clays that give power and density. Scattered throughout the property we find the "galets roulés" rounded stones typical of the area, which at night return to the plants the heat absorbed during the day, increasing the concentration of the grapes.

Stanislas Wallut and the search for finesse

"In 2010 I took over the reins of the Domaine and from the outset I wanted to focus on the search for finer expressions. And the abandonment of wooden barrels in favour of concrete containers was one of the first steps towards this (...) In the cellar, the first phase is the selection phase: the baskets are tipped onto a large table, where four people carry out work that borders on the maniacal. Each bunch is picked, sniffed, and cut in half to check that the innermost berries are completely healthy. Working without sulphites, the grapes must be perfect" After selection, the grapes are sent to the fermentation tanks where they are placed by gravity and in layers, alternating destemmed grapes and whole bunches. The use of stalks is important to Stanislas, because they contribute fundamentally to the green freshness of the wines.

A lot of work in the field and total attention in the cellar, this is the hand of Wallut, which gives us wines of great gustatory impact but of superfine finesse.
