Podere Cipolla is located south of the ancient Via Emilia in Coviolo, on the outskirts of Reggio Emilia, in the heart of one of the world's most famous food and wine areas. It was established in 2003 thanks to Danny Bini, who at the time started with two small plots of half a hectare each planted with local grapes-Malbo Gentile, Grasparossa and Ancellotta.
The longevity of Lambrusco
To date, the winery has a total of 3 hectares of vines in which Danny has planted other varieties from the area: Spergola, Malvasia and Salamino, as well as the rare Montericco, a variety of Lambrusco.
Danny has always produced bottle-fermented wines, in the belief that this is the right method to do justice to such a vocated territory: “Our wine recalls our culture, our traditions, gastronomic and otherwise, our refermented wines are wines that bring you back here to Emilia with their aromas, their terroir.
In addition, refermented wines are living wines and it is important to communicate this as well: you bottle a still wine in the winter and after the summer the wine is sparkling, the bottle is transformed, totally different instead the standardized speech from the autoclave.
Ours are wines are able to evolve over time, in fact they improve with time, I have tried amazing bottles of Grasparossa 10 years old, 15 years old and I realized that the potential is exceptional, the potential there is in these bottles, not just a ready-to-drink wine.”
