Domaine de la Luolle is an ode to the Côte Chalonnaise! Pure wines that tell us an unprecedented story of this area.

Domaine de la Luolle, located in Moroges, is not a winery that follows trends. For over 50 years, a farming model has been proposed here that has become a benchmark for the winemakers of the area. Here, respect for the land is not a marketing claim; it's a family history that began long before "organic" became a buzzword often stripped of meaning.

The approach is pure and uncompromising: to create wines that speak of the territory, that awaken the senses, and that are perfect for authentic shared moments.

"Our vineyards are planted on clay-limestone or clay-silt soils in a semi-continental climate. They are distributed across several appellations: Givry and Mercurey, Bourgogne Côte Chalonnaise, and Aligoté. This diversity of terroirs brings completely different aromatic profiles as a gift—that's where the beauty lies! Our two regional grape varieties, Chardonnay and Pinot Noir, can express themselves in countless ways."

In the cellar, the approach is minimalist.

Each terroir is vinified separately to create single-varietal cuvées.

Red grapes, whole or partially destemmed, are placed in vats. Alcoholic fermentation occurs using natural, indigenous yeasts. The wines are then aged in barrel. They undergo only a slight sulfiting after malolactic fermentation and before bottling.

White grapes, on the other hand, are pressed whole upon arrival at the cellar. The resulting must is placed in vats at 10°C to allow the largest particles to settle, and is subsequently clarified. The clear must, along with its finest lees, is transferred directly to barrels for fermentation. White wines are lightly sulfited after pressing.

Bottling takes place 12 to 18 months after the harvest.
