Vinification: Spontaneous fermentation with 100% of the stalks and a maceration period of 20 to 35 days depending on the variety.

Aging: 6 months in French oak tonneaux

The sequel to Chato Paquita: made from local varieties Callet, Fogoneu, Manto Negro and Garnatxa Peluda from 8 different vineyards between 35 and 65 years old located in the municipalities of Felanitx and Porreres, all on red clay soils.

The grapes are vinified with 100% of the stalks, daily pigeage and macerations ranging from 20 to 35 days except for the Garnatxa Peluda, which is treated in carbonic maceration. Ageing for 6 months in 500l tonneaux of fourth/fifth passage French oak.

The nose is amusing, the mouth has great freshness and drinkability with slightly pronounced tannin. Yet another great wine at the hands of Eloi.

Sistema Vinari nasce per una scommessa nel 2010. Eloi Cedò Perellò comincia a fare vino nel suo garage con uve regalate dagli amici, e altrettanto gratuitamente il vino prodotto viene donato e condiviso tra pochi appassionati, un po' illegalmente, per divertimento.
