Vinification: Spontaneous fermentation in stainless steel tanks with no temperature control and 11 days of skin maceration, followed by 5 months of aging in stainless steel, no filtration, and no added sulfites.

Aging: Bottle re-fermentation with the addition of white and red grape must, and aging on lees for at least 6 months.

Serving temperature: 8-10° C
