Obtained via soft pressing, the wine completes its fermentation in the bottle and rests on the lees for 12–18 months. It is manually disgorged à la volée after a three-week remuage (riddling).
Straightforward, pungent, angular, and textural. An unusual, surprising sip of Riesling.

Estelle & Cyril Bongiraud
In the village of Rogljevo, in Serbia, within unspoiled nature, Estelle and Cyril Bongiraud produce wines with a deep breath on one of the greatest terroirs of the Balkans. Originally from Burgundy, they settled in this wine village in 2008, a place that boasts a thousand-year-old history and is composed of 300 limestone cellars with characteristic arched doors. Very old grape varieties in semi-abandoned vineyards.
Like two gold prospectors, they spent a long time searching for these old vines, which were often reclaimed by the woods on these hills bordering Bulgaria. They define it as a project of rebirth, born from deep passion and knowledge.
Cyril has worked and produced wines for some of the world's largest wineries, such as Domaine de la Romanée-Conti, just to name one. Experience is certainly not lacking!
