Vinification: Spontaneous fermentation in Georgian amphorae (Qvevri) with long maceration on the skins
Aging: in qvevri for 6 months
Serving temperature: 12-15° C
Allergens: contiene solfitiTrebbiano Romagnolo, Trebbiano di Spagna and a small percentage of Grechetto Gentile. Six months of maceration in contact with the skins without stalks in buried Georgian amphorae.
On the nose this wine is sunny and extroverted with a fruity note of ripe apricot that remains imprinted in the minutes after tasting, slight oxidized note and a good volatile that gives drive to the aromas. Aromas that at this moment (May 2023) remain partially unexpressed due to recent bottling; with a couple of months in bottle we are sure it can express its full aromatic potential.
Where the wine does the magic is definitely in the mouth, all the premises would lead one to think of a soft, broad and full-bodied wine, instead it is a very precise wine, played entirely on hardness and unexpectedly "tight", also in this case, as in "L'Animo 2022", the elegant minerality is the real skeleton that gives structure to the wine.
