La Biancara, founded in 1988 through the pioneering vision of Angiolino Maule and his wife Rosamaria, is the winery that has redefined the concept of natural wine on the volcanic soils of Gambellara, between Vicenza and Verona. Across approximately 18 hectares of vineyards, Angiolino and his family apply a radical philosophy: "remove nothing and add nothing to the wine." This is their true specialization—an approach where Nature is sovereign, limiting interventions in both the vineyard and the cellar to a minimum. The result is an annual production of around 150,000 bottles that encapsulate the authentic expression of the terroir, a glass of purity and ecological integrity that translates into dynamic, long-lived, and incredibly drinkable wines. From the first historical labels like Sassaia to the current expressions, La Biancara is synonymous with courageous and conscious viticulture.

The identity of La Biancara's wines is deeply connected to Garganega, but also to varietals like Durella, Tai Rosso, and Merlot, all grown on the hilly slopes between Gambellara and the Lessini Mountains. The biodynamic approach in the vineyard is the foundation for obtaining the highest quality grapes, while in the cellar, methods such as spontaneous fermentation and skin maceration for the whites take center stage. This approach was pioneering in a commercial context, as it was a method previously considered only suitable for "homemade" wine.
The aging process, often carried out in large oak barrels, follows the wine's natural rhythm. It is bottled without filtration and with no added sulfites (or in minimal doses). These methodologies offer a unique tasting profile: wines that are energetic, with vibrant minerality and surprising complexity. Choosing La Biancara means choosing the very essence of the grape, captured in the bottle with the utmost artisanal honesty.
