Collecapretta is a small farm located in southern Umbria, on the Colli Martani at an altitude of about 500 meters above sea level. The Mattioli family, owners of the land and the farm, has set the production philosophy on a closed-cycle agricultural model, so there is an animal farm for the production of cheese and salami, a cereal crop for the production of flour and fodder, a part of forest and about 5 hectares of vineyards from which they produce 11 labels of wine.
The environment is perfect for the production of high quality wines: the climate is tempered by the proximity of the Apennine chain on which the Gran Sasso towers in the distance, this presence always guarantees fresh air currents that balance the ripening of the grapes especially in the hot season. The soils are a mix of clay rich in calcium and iron with outcrops of tuff and travertine limestone.
Simple processing methods
All wines are made in much the same way: spontaneous fermentation takes place in open cement or steel tanks without temperature control or sulfur additions. The wines then age for various periods of time in vitrified cement vats or fiberglass tanks before being bottled in synchrony with the waning lunar cycle. No sulfur is used at any time during the winemaking process. All work in the vineyard is completely natural; only compost made by their own animals is used for fertilization.
All this simplicity generates wines of high emotional impact. Cleanliness, precision but also character and depth. Bottles that remain in the heart and memory of those who taste them. Too bad about the small quantities produced, but this also contributes to the value of an already fantastic production.
