Stephen does not need much of an introduction, we leave below some excerpts of his thoughts:
"Certainly I found myself at a crossroads because on the one hand there was the so-called modernity pushing me to go in one direction and, on the other hand, there was my instinct pushing me to go in the opposite direction. I chose organic without uncertainty because I had an ecological background anyway. At that time there was no talk of organic, much less biodynamic. My choice was not only instinctive but also anchored in political reasons.
Seeing that the farmer now had the noose around his neck with the blackmail of "buy one bag," then buy another, then buy yet another, to create a total dependence on the chemical-pharmaceutical industry made me suspicious. They used to tell me, "You are against progress. The world is going in that direction." I was very lonely and sometimes I felt in crisis because I wondered, "Will I be, then, on the right path?" But instinctively I was convinced that I was on the right path."

"Agronomy is not an exact science, but a humanistic science because it deals with the living. It is not a science that calculates, but one that understands. A science that listens, that meets, that observes, that recognizes the other as in human relationships. Agriculture is not Nature but with Nature and in Nature and is lawful and positive if it makes Nature's own laws its own.
I immediately chose organic and started without uncertainty to make wine without artifice, my reasoning was exactly this: if the process of fermenting grapes can happen naturally, why do I have to do it any other way? Why do I have to go looking for artifice where there is a natural process that, knowing and indulging it, leads me to even better results?
