Fara DOC 2019
Briona, Novara
The Fara DOC 2019 by Francesca Castaldi is a powerful expression of Alto Piemonte, rooted in the acidic, mineral-rich soils of Briona. A traditional blend of 70% Nebbiolo and 30% Vespolina, it is crafted with a philosophy of minimal intervention, featuring spontaneous fermentation and a 30-day submerged cap maceration. This slow extraction, followed by 24 months in large oak barrels, creates a wine of profound structural integrity, bottled without filtration to preserve its authentic soul.
On the nose, it reveals a complex bouquet of dried flowers, black pepper, and almond, leading into a palate defined by vigorous tannins and a vibrant, savory-mineral finish. While it is an ideal match for braised meats and aged cheeses today, its impeccable balance ensures a remarkable evolution over the next 15-20 years.
Castaldi Francesca
Nestled in the landscape of Briona, the winery of Francesca and Marco acts as a guardian of Alto Piemonte, interpreting viticulture as a harmonious dialogue with the environment. Across their 8 hectares in the Colline Novaresi, nature dictates the rules: although certified in integrated pest management, the farming spontaneously evolves into a biological regime whenever the vintage allows, minimizing human intervention. Here, the work consists of ancient gestures: the vines are tended exclusively by hand, respecting the plant's natural timing through to the manual harvest.
