Vinification: The grapes, harvested when very ripe, are vinified separately by plot. Spontaneous fermentation with brief maceration to enhance freshness and transparency.

Allergens: contiene solfitiSol Aria 2022 represents the next step up in terms of complexity compared to the Ca' Rosso. While the latter is defined by immediate freshness, Sol Aria reveals a deeper, more "meditative" soul.
The name itself is a tribute to the natural elements: the Sole (Sun) that warms the southeast-facing vineyards, and the cool Aria (Air) sweeping down from the Lessini Mountains, ensuring the ideal temperature shifts for aromatic development. It is produced through a late harvest: the grapes are left on the vine for about two weeks longer than usual, allowing for a slight over-ripening that grants the wine a more significant and enveloping structure.
The blend is a classic trio of Corvina, Corvinone, and Rondinella, selected from the oldest and best-exposed vineyards.
The 2022 vintage was warm, bestowing the wine with extraordinary fruit maturity while maintaining the vibrant acidic drive typical of the estate's limestone soils. On the nose, scents of ripe cherry and black cherry dominate, quickly followed by more complex notes of black pepper, dried violet, and a pleasantly balsamic and mentholated finish.
On the palate, it is full-bodied yet elegant. The tannins are present but exceptionally velvety, and the persistence is remarkable. Despite its "Superiore" structure, it maintains a smooth, drinkable flow that never becomes cloying.

Il Monte Caro
La cantina Il Monte Caro nasce nel 1986 da un'idea di Enzo Marcolini che, assieme alla moglie Carla, scoprì per caso un terreno collinare tra i 150 e i 300 metri di altitudine a Mezzane di Sotto, se ne innamorò e decise di rimanervi iniziando una nuova avventura agricola.
Su questo monte, comunemente chiamato "sassaia" per la quasi totalità di scoglio calcareo che vi si trova, hanno piantato uliveti e vigneti e costruito un pozzo artesiano ed una casa rurale, dando così vita alla tenuta.
Il Monte Caro è uno di quei posti vibranti e ricchi di vita a cui è impossibile rimanere indifferenti. 7 ettari di vigna, bosco, uliveti, alberi da frutto ed erbe spontanee che circondano completamente la casa e la cantina.
