Sottosale Rosato is a wine born out of patience, as it requires different timing and management based on the ripening of the grapes: Syrah is harvested early at the end of August (when the nights begin to cool down) to preserve acidity, while the native varieties Raspato Nero and Reale Bianca are harvested at the end of September.
It is a rosé with great personality, also thanks to the ungrafted vines of the native grapes, making it ideal for lovers of pure wines seeking saline freshness, aromatic clarity, and an authentic bond with its territory of origin.

Aurete
The story of Giovanni Vittiglio, Paolo Ingino, and Eugenio Varone begins long before the Aurete project was officially born in 2017. Master brewers first, then restaurateurs, they fell in love with this corner of Lower Lazio within the Aurunci Mountains Natural Park, discovering a millennial tradition of viticulture. In this isolated, pristine valley, they have become the protagonists of a true act of agricultural resistance blooming amidst the woods of Esperia, where ancient sedimentary carbonate rocks dictate the rules.
Their focus has been the recovery of ancient, forgotten indigenous grape varieties unique to this area. They centered their efforts on Reale Bianca and Raspato Nero—vines that, even today, remain ungrafted (piede franco)—producing wines that define the very essence of the Aurete project.
The estate manages approximately four hectares of vineyards under biodynamic cultivation, stripping away every chemical shortcut to let the land speak for itself. Here, wine isn't manufactured to follow the latest trends; it is guided with a visceral approach and a philosophy of minimal intervention. This aims to preserve the integrity of an ecosystem where the vines coexist with the Mediterranean scrub and the Apennine landscape, delivering an energy in the glass that can only be described as electric, alongside an aromatic purity that catches anyone accustomed to homogenized products completely off guard.
