The influence of the name "Sottosale Mare Tyrrhenum" evokes the sea breezes that rise from the Gulf of Gaeta toward the vineyards, imparting a distinct savory and mineral note to the wine. It is the result of the vinification of native white grapes with ancient traditions: these include Reale Bianca (a nearly extinct local autochthonous variety that Aurete helped register in the national catalog) combined with other white varieties from the vineyard. On the palate, it reveals notes of Mediterranean scrub (rosemary, thyme, broom) and fresh floral hints. There is a core of white-fleshed fruit (pear, white peach) enriched by citrusy nuances of citron and lemon zest. The finish is mineral with flinty undertones, paired with a briny character that truly evokes the sea air.

Aurete

The story of Giovanni Vittiglio, Paolo Ingino, and Eugenio Varone begins long before the Aurete project was officially born in 2017. Master brewers first, then restaurateurs, they fell in love with this corner of Lower Lazio within the Aurunci Mountains Natural Park, discovering a millennial tradition of viticulture. In this isolated, pristine valley, they have become the protagonists of a true act of agricultural resistance blooming amidst the woods of Esperia, where ancient sedimentary carbonate rocks dictate the rules.

Their focus has been the recovery of ancient, forgotten indigenous grape varieties unique to this area. They centered their efforts on Reale Bianca and Raspato Nero—vines that, even today, remain ungrafted (piede franco)—producing wines that define the very essence of the Aurete project.

The estate manages approximately four hectares of vineyards under biodynamic cultivation, stripping away every chemical shortcut to let the land speak for itself. Here, wine isn't manufactured to follow the latest trends; it is guided with a visceral approach and a philosophy of minimal intervention. This aims to preserve the integrity of an ecosystem where the vines coexist with the Mediterranean scrub and the Apennine landscape, delivering an energy in the glass that can only be described as electric, alongside an aromatic purity that catches anyone accustomed to homogenized products completely off guard.
