Grape variety: Pinot Nero

Vinification: grapes are destemmed and left to macerate for about six hours. This is followed by racking into a concrete tank and spontaneous vinification in the tank for about twenty days.

Aging: Minimum of 48 months.. Subsequent disgorgement and then topping up with the same wine.

Serving temperature: 10-12° C

Pinot Noir in purity. Old but intense pink color, excellent evolutionary and tertiar note on the nose. In the mouth this new disgorgement is blowing us away, very deep, balanced, broad, long wine with multifaceted flavor. Mineral notes accompanied by elegant hints of tobacco and woody notes.

L’Azienda agricola Cherubini si trova oltre i confini della Franciacorta orientale immersa in un parco naturale delle colline bresciane a pochi km dal centro cittadino. In questa vallata si trova un terroir di millenaria formazione con falde acquifere sotterranee e rocce ricche di calcare con substrato argilloso. Queste caratteristiche del suolo unite a una leggera brezza costante ed escursioni termiche donano ai vini mineralità e acidità tipiche del terroir di produzione. Non vengono utilizzati strumenti di agricoltura convenzionale come diserbi o pesticidi di sintesi ma vengono seguiti i percorsi della natura.
