Straighter and with a spicier bubble than the brut, it is a wine that especially wins over palates that like bubbles without frills or crusts! SoloUva non è solamente il nome di questa cantina ma anche il metodo con cui si fanno i vini. Il processo prevede l'utilizzo sia per la rifermentazione in bottiglia che per il dosaggio, l'utilizzo degli zuccheri contenuti nell'uva vendemmiata a piena maturazione, anziché del saccarosio. Questo consente di produrre vini senza ingredienti esogeni aggiunti, solo UVA!
