This wine takes shape from a mosaic of three PIWI varieties: Solaris, which makes up half of the blend, Bronner at 40%, and a small balance of Souvignier Gris. The Solaris undergoes whole-cluster fermentation to bring a highly interesting vegetal and herbaceous note into the glass. This is supported by a subtle hint of raw tannin that enhances the structural firmness, beautifully balancing the fragrant notes that these semi-aromatic varieties naturally possess. On the other hand, the Bronner and Souvignier Gris undergo a three-day skin maceration—a brief yet precious window to extract color, body, and a dense aromatic texture.

On the palate, it is a wine of great dynamism. The entry is enveloping and almost velvety thanks to the oak aging, but it is immediately struck by a citrusy acidity and a saline, chalky minerality that echoes the Dolomite rock.

Un'Orsa Minore

Un'Orsa Minore is Filippo de Martin. The company is located in San Gregorio nelle Alpi in Roncoi, a small hamlet at the foot of Mount Pizzocco within the Belluno Dolomites Park. All around are the Pale Mountains, a magical place of stones, sunsets, steep meadows and high pinnacles, where a handful of winemakers carry on an ancient winemaking tradition.

The project began in 2011 with the creation of the first vineyard (by Solaris) on the Col de Doro to which, over the years, new plantings were added together with the recovery of old vines cultivated with historical Valbelluna varieties.

Then in 2014 it was the turn of Bronner, to certify Filippo's interest and commitment with resistant vines.
