From 20-year-old vines and a minimum yield of 14 hectoliters per hectare on average. Fermentation and aging takes place in 5-year-old 400-liter barrels for 14 months. The wine is bottled unrefined and unfiltered and receives a small addition of sulfur only at bottling.

Concentrated and intense with notes of salted butter and fresh bread with firm acidity and a nice saline finish.

Alice & Quentin Beaufort

Alice et Quentin Beaufort è un domaine nato nel 2007. Borgogna: tutto ha inizio quando Alice e Quentin Beaufort rilevano una vigna a Prusly sur Ource, nella Cote d’Or, in Borgogna. A pochi chilometri di distanza dalla Champagne, il territorio è particolarmente vocato per il pinot noir e, per condizioni climatiche, ricorda quelle di Polisy, nella già succitata Champagne. Champagne: lo Champagne Quentin Beaufort è senza tempo. Quentin Beaufort è il compositore del vino. Rende leggiadre le cose difficili. Artista emergente, ricorda i grandi incompresi. La cantina ha sede a Polisy, nell’Aube.
