A Cabernet Sauvignon composed of various clones, facing the sea, south-west exposed, and illuminated from dawn to dusk. Deep in color and substance, it weaves together forest fruits, wild blackberries, chili pepper, and cloves, with a full-bodied sip perfectly balanced between tannin and acidity.

The vineyard is exposed toward the south-east, facing the sea, Elba Island, and Montecristo Island. Compared to the north-east slope, the soil features a massive presence of rocks (skeletal soil) that decreases down the hillside.

The soil structure is made of equal parts clay, silt, and sand, with a high concentration of metamorphic rocks derived from clay with a schist and galestro structure.

The Cabernet vines are surrounded by Mediterranean scrub consisting of broom, myrtle, mastic, cork oak, holm oak, and many almond trees.

The presence of the sea acts as a mirror, creating a highly intense light that plays a fundamental role in the growth of the vines.

I Mandorli

The winery was founded in 2002 by Maddalena Pasquetti’s father, Massimo, who fell in love with a few hectares of land in Belvedere di Suvereto and purchased them. In 2003, the first Sangiovese vineyards were planted on the north-east side, followed in 2004 by the first Cabernet vines on the south-east side.

We belong to the land, not the other way around. Every season teaches something new, and our job is to observe, adapt, and find the balance between agricultural practice and soil life. We use green manure in alternating rows to nourish the soil, natural preparations in the vineyard, and copper and sulfur only in the quantities strictly necessary depending on the vintage.

The plants have found their balance with the environment and often regulate themselves. In the newer Vermentino plots, we are experimenting exclusively with homeopathic preparations, completely without copper and sulfur—to understand just how far we can push our boundaries.
