This is an Ancestral Method wine made from Chardonnay and Trebbiano, bottled while the primary fermentation is still ongoing.
It's a fresh, floral wine with a light and refined pétillant. It's very enjoyable to drink, offering floral notes and fresh fruit, particularly apple and peach.
This is an immediate, straightforward wine that gains aromatic complexity from the presence of yeast, making it denser and more textural.
Pear juice! Delicious.

The Paffarini winery was established not far from the walls of the distinctive 13th-century circular castle of Ripa, a small village situated 313 meters above sea level and about 14 km from Perugia.
For four generations, the family has cultivated vines and olive trees on this land.
The young estate spans approximately 10 hectares, with 4 hectares dedicated to vines. The vineyards are located on sun-kissed hills, bathed in sunlight from dawn till dusk, and characterized by a mild and breezy climate.
