This is a 100% Grechetto from vines planted in 2011 and from the mid-1980s.
The 2023 vintage was aged for 8 months in stainless steel. The tasting leaves a clear impression of a truly well-made wine. The nose is vibrant with fresh white flowers, a slight mineral sulfur note, acacia honey, and warm fruit. On the palate, it surprises with its freshness; this wine doesn't undergo malolactic fermentation and is characterized by an acidity reminiscent of apple.
It embodies two souls: a very fresh part that makes your mouth water and is almost zesty, and on the other side, a rich, thick, ripe pulp. It leaves a very interesting sensation on the palate: dry yet also round.

The Paffarini winery was established not far from the walls of the distinctive 13th-century circular castle of Ripa, a small village situated 313 meters above sea level and about 14 km from Perugia.
For four generations, the family has cultivated vines and olive trees on this land.
The young estate spans approximately 10 hectares, with 4 hectares dedicated to vines. The vineyards are located on sun-kissed hills, bathed in sunlight from dawn till dusk, and characterized by a mild and breezy climate.
