The name of the cuvée, "Bélemnites", is a direct reference to the geological composition of the soil, which is rich in prehistoric marine fossils (specifically belemnites, mollusks from the Mesozoic era).
Chardonnay and Savagnin, a classic Côtes du Jura blend, are aged in the Ouillé style (topped-up barrels). Unlike the traditional oxidative style of the Jura with wines aged under a veil of flor, here the barrels are constantly topped up to preserve the freshness of the fruit, the purity of the grape varieties, and the mineral imprint of the soil.
On the palate, distinct mineral notes (chalk, flint) stand out immediately, accompanied by hints of fresh citrus, quince, white flowers, and touches of dried fruit or beeswax on the finish, typical of aging in small wooden barrels. In the mouth, it is straight, vertical, and characterized by a vibrant acidic tension. It boasts an excellent textural density provided by the Savagnin, which balances the freshness, closing on a decidedly saline, deep, and incredibly long finish.

Domaine Buronfosse
Peggy is a farmer with a dominant character, proud of her land, alongside Jean Pascal, her husband and life partner since she was 20. They own 4.6 hectares of vineyards in Rotalier and have a story waiting to be told.
After working in Rotalier with Jean François Ganevat and the Labet family, Peggy managed to find less than one hectare of her own vineyard in 2000, from which she could start her own project. Since then, they haven't stopped for a second to realize their dream: living in nature with bees, horses, vineyards, and a vegetable garden.
