Vinification: Spontaneous fermentation and maceration on the skins for about 40 days in steel tanks
Aging: in small exhausted acacia barrels for a period of 9 months. The wine rests for an additional 6 months in a historic "Balmetto" from 1885.

On the nose, hints of mimosa and chamomile stand out with notes of hay to complete the herbaceous part. Then it increases in volume with a balsamic stretch of resin and a pulpy, ripe apricot that we also find in the mouth. Taut and rightly tannic, it is a sip that satisfies for structure but also essentiality.

L'esigenza di un forte cambiamento
"...Londra 16 agosto 2013. Mi trovavo al V&A museum per assistere alla mostra "David Bowie is here". In quel pomeriggio tipicamente londinese, furono forti e chiare le sensazioni percepite di una fortissima esigenza di cambiamento"
