Fattoria Lavacchio
Pontassieve, Firenze
Fattoria Lavacchio is located on top of the Montefiesole hills, about 20 km from Florence, in the heart of the Chianti Rufina region.
Founded in 1700, it passed into the hands of the Lottero family in the 1970s and immediately began working in a more natural style, arriving at total organic production in 1978.
The estate has more than one hundred and fifteen hectares, twenty-four of which are dedicated to vineyards and fifty-six to olive groves, while the remainder is dedicated to woods, truffle fields, wheat and vegetable gardens.
Faye's mission
The farm, under the constant impetus of Faye Lottero, has always been in the vanguard, both in the use of biodynamic farming practices and in the desire to convert the entire estate to “organic” management; in fact, it was one of the first ever to boast organic certification in Chianti Rufina.
At the heart of Faye's company philosophy is observation, listening to the land, the plant, the grain; a listening that leads to perpetual questioning, far from the effects of fashion, at the service of nature and the products themselves.
"We believe that cultivating our vines and olive trees according to the precepts of biodynamics is the guarantee of producing quality wines and oils without betraying our terroir. We are responsible for the legacy we leave to future generations. We transmit our love of nature through our wines and oils" Faye
The demonstration of this philosophy is the “Puro” line of wines without added sulphites, bottles that show not only the intention but also the ability to go beyond oenological standards and create innovative wines without losing quality. These are wines that are produced seriously but do not take themselves too seriously.
