Vinification: Gentle destemming of the grapes; fermentation and maceration at controlled temperature in stainless steel for about 10 days, with numerous pumping over.
Aging: In 35 hl oak barrels for about 12 months. Then bottle-ageing for at least 6 months.
Serving temperature: 16-18° C
Allergens: contiene solfiti"Cedro" takes its name from the centuries-old plant planted near the farm since its first foundation, is a wine meant to be a tribute to Chianti Rufina. Classic in the choice of grapes with Sangiovese, Canaiolo and Ciliegiolo and traditional in the vinification with a passage in large oak barrels for a period of 12 months.
On tasting fully "Tuscan" wine with the sangiovese part playing the lead with notes of red fruit and violet scents. The altitude and the area, remember that the Rufina area is the coolest in Chianti, give tension and freshness to the wine lengthening its pace. It closes with polished tannins of good finesse.

Fattoria Lavacchio
Fattoria Lavacchio is located on top of the Montefiesole hills, about 20 km from Florence, in the heart of the Chianti Rufina region.
Founded in 1700, it passed into the hands of the Lottero family in the 1970s and immediately began working in a more natural style, arriving at total organic production in 1978.
The estate has more than one hundred and fifteen hectares, twenty-four of which are dedicated to vineyards and fifty-six to olive groves, while the remainder is dedicated to woods, truffle fields, wheat and vegetable gardens.
