Vinification: Spontaneous fermentation with indigenous yeasts, 48-hour prefermentative maceration, then punching down and pumping over for 20 days.
Aging: in 10 Hl French wood for 4 months and then steel until bottling.

A wine that celebrates Roberto and Lucia's love of their Tuscan terroir and tradition, it is the perfect antithesis to "parkerized" Chianti, combining all the most traditional Chianti blend grapes except Sangiovese: Canaiolo, Malvasia nera, Foglia Tonda and Pugnitello grown biodynamically from 50-year-old vines.
Tasty, with a sincere soul, it is rustic with an herbaceous aromaticity, the fine tannins, a sign of perfectly ripened fruit, mellow the sip, where a fresh, crisp cherry shines; the perfume is that of a spring countryside.

Podere Casaccia
Il Podere Casaccia è situato sulle colline di Scandicci, a pochi km da Firenze, con circa 12 ettari tra bosco, ulivi e vigne. Le vigne,coltivate con metodo biodinamico, hanno un’età che va dai 40 ai 50 anni, costituite in gran parte da vecchi cloni di sangiovese e molti altri vitigni autoctoni toscani come Canaiolo, Malvasia Nera, Pugnitello e Foglia Tonda.
