100% "mountain" Catarratto, grown from a vineyard at 650 metres above sea level. Vintage 2021, the wine spends 18 months on the fine lees in the bottle before being disgorged.

A harmonious sparkling wine with a fine and delicate effervescence, playing on hints of citrus, aromatic herbs of rosemary and sage, and a lightly toasted finish reminiscent of almonds.

A fragrant wine with a silky body moves dynamically in the mouth, offering a very elegant and fresh gastronomic effervescence.

Elios

Located in the heart of Western Sicily between Alcamo and Camporeale, Elios is the brainchild of Nicola Adamo and Guido Grillo—two friends who chose to return to the land to rewrite the rules of tradition. With a dynamic approach and deep respect for the ecosystem, Elios manages approximately 15 hectares of vineyards, olive groves, and citrus orchards, strictly following organic farming practices.

Their philosophy is built on minimal intervention both in the field and the cellar: the goal is to produce natural, wholesome wines free from invasive manipulations. These wines act as authentic storytellers of a unique terroir, where the warmth of the Sicilian sun meets the freshness of the highlands and the briny character of sea winds
