Tommaso Cappa Specialities: Red wine

Tommaso and Agnese—a winemaker and an architect united by their passion for a land they have learned to cultivate and love.

Originally from Turin, in 2020, after gaining knowledge and experience around the world, they decided to start a winemaking project in Dogliani, thanks to a small vineyard of Dolcetto and Barbera. Over the years, step by step, they have grown to produce nearly 10,000 bottles.

For them, wine is an expression of the land that nourishes it and of the work done in the vineyard and the cellar, where they have always engaged in non-invasive farming practices aimed at improving the surrounding habitat and environment.

The "borgata" (hamlet) is located on the Valdibà hill, one of the last hills of Dogliani before entering the Alta Langa, and features three houses and a winery. "We started from a small 40-square-meter cellar; today, we are building a new space for our wines in the hamlet's ancient barn."

The Vineyards and the Territory

"Our vineyards surround the hamlet and all face southwest. We are fortunate enough to reach them on foot, except for a few separate, rented plots that we cultivate entirely by hand. We practice organic farming, constantly observing and studying the best approach to care for and manage our vines and their fruit. The soils feature alternating layers of clay, silt, and sand with a high limestone content. This mineral combination gives the wines a distinct tannic structure and a characteristic freshness.

We believe that to truly value the work and time behind this project, one must first understand the land, then the vine, and finally the tradition. To achieve this, we always rely on non-invasive agricultural practices aimed at improving the habitat. Our wines represent the territory through a mindful and natural winemaking process.

We produce Dogliani DOCG, Langhe Nebbiolo DOC, Barbera, Vino Rosso (Neretta Cuneese), and a sparkling rosé. We vinify in stainless steel, concrete, and amphora, using spontaneous fermentation with a pied de cuve."
