This 100% Sangiovese undergoes a distinctive process: the grapes are held overnight in a refrigerated container, bringing their temperature down to 12 degrees Celsius. Vinification then begins the following day.
Two fermentations start simultaneously: a biological fermentation in the must, and an enzymatic one (due to semi-carbonic maceration) inside the grape berries themselves. The wine is pressed within 12 days to maintain its aromatic and flavor integrity.
This is a delicious and beautifully balanced wine, showcasing both fruit and salinity. There's a fundamental harmony that transitions from its fruity core to a nearly sharp minerality, all underpinned by the characteristic freshness of Monte Amiata!

Bakkanali: A Terroir-Driven Approach on Mount Amiata
Bakkanali is the brainchild of Sebastian Nasello, former enologist at Podere Le Ripi, and Ugo Fabbri, a highly innovative figure in artisan wine. This certified organic winery, currently transitioning to biodynamic certification, cultivates a total of 5.5 hectares of vineyards.
Diverse Terroirs and Elevations
The estate's vineyards boast a remarkable geological complexity, reflected in their diverse soil compositions:
- Poggioferro (Lower Elevation Sangiovese): Around the winery, the Sangiovese vineyards are named "Poggioferro" due to their high iron content in the soil.
- Higher Elevation Vineyards: As the elevation increases, the underlying rock reveals its most interesting characteristics.
- Limestone: Imparts tension to the wines.
- Volcanic Sands: Contribute a spicy minerality.
- Higher Altitudes: Refine the overall wine profile, exemplified by the Chardonnay vineyard at 800 meters.
Mount Amiata's Unique Geology
