This wine was born out of Damiano's passion for refermented wines, bottled with the sugars still present, after a few months it still had not started fermenting in the bottle again, hence the idea of the name... OPS!
Actually with the arrival of hot weather in summer the wine went dry, completing the refermentation with a creamy, gastronomic bubble. Tuscan fruit and essence.

Cantina Anonima
Cantina anonima è una piccola azienda che si trova sulle immediate colline a nord di Lucca.
Nasce da un'idea di Damiano Donati, talentuoso ed eclettico Chef lucchese, che insieme all'amico ed esperto di vini Ruggero Baronti, ha dato vita a questo interessante progetto. Vigna di 1,5 ha in un contesto incontaminato ed una produzione minuscola. Vini veri, dritti, che ci hanno colpito per la loro immediatezza ed onestà.
